The banana obsession, justifiedBanana's signature aroma is isoamyl acetate — the single molecule behind banana candy and Laffy Taffy. Toss it with butter popcorn and the two share that ester (plus ~113 compounds), so it reads as sweet and “banana” before any sugar lands.
