  • 300g yellow split peas
  • 1 onion, roughly chopped
  • 2 large sprigs mint
  • good quality olive oil

Soak the beans in cold water overnight the night before preparation to soften them.

When you're ready to make the soup, drain and cover with fresh water in a saucepan. Bring that to the boil before reducing the heat and simmering for about and hour 15 minutes. Add the onion, mint and olive oil to the water after it boils. Be sure to add boiling water as needed to top up.

When it's finished cooking, take two thirds of the peas and water and put in a blender. Blend the mixture until it's smooth then put it back into the pan.

Put the pan back on the heat for a few minutes, stirring to ensure it is even.

Serve hot!
