  • 2 1/2 pounds orange pumpkin
  • 3 1/2 cups chicken stock
  • 3 1/2 cups milk
  • salt and white pepper
  • 2 teaspoons sugar

Directions

Peel and deseed the pumpkin and cut it into pieces. Add the stock, milk, salt, pepper, and sugar to the pumpkin in a large pan and simmer for 20 minutes on a medium heat.

Remove the pumpkin from the mixture and puree it in a blender. Put the puree back into the pan and stir well.

Bring the mixture to the boil, turning it down immediately. Leave it to simmer for a few minutes more.

Serve hot.
