- 3 cups sprigged cauliflower
- 1 small onion
- 2 tablespoons oil
- 1 tablespoon soy sauce
- 2 eggs

Sprig cauliflower. Wash and soak in water. Drain. Slice onion. In a pan, heat oil and fry onion until it turns transparent. Add cauliflower and soy sauce and toss. Add 1 tablespoon hot water. Cover pan. Over high heat, cook for 2-3 minutes or until cauliflower is tender. Add lightly beaten eggs and 1 tablespoon water. Stir. Add salt as desired. When eggs set, turn off heat and serve.
