  • 9 cups cubed unpeeled round red potato (about 3 lbs.) or another potatoe of your choice
  • 1/2 c. diced onion
  • 1/2c. diced celery
  • 1/2 c. cup diced radishes
  • 1/4 c. sweet or dill pickle relish (optional)
  • 3 hard-cooked egg, mashed
  • 1/3 c. mayonnaise (or more to make it creamy)
  • 2 TBS. chopped fresh parsley
  • 1 tsp. prepared mustard (I use other mustards at times - i.e Dijon)
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp garlic salt

Directions

Place potatoes in a large pot, cover with water, and bring to boil. Cook about until tender.

Drain & cool; cut into cubes, place in bowl with next 5 ingredients; toss gently.

Combine mayonnaise and next 5 ingredients; stir well. Pour over potato mixture;

toss to coat. Cover and chill.
