  • 1/3 cup Granulated Sugar
  • 1/2 cup Water
  • 2 tbsp Lime Juice, fresh

2 in a small saucepan, combine sugar and water; bring to a boil and cook until sugar is dissolved, about 1 - 2 minutes.

3 Or, place sugar and water in a 2-cup glass measure.

4 Microwave at high for 2 - 3 minutes or until liquid comes to a boil, stirring once to dissolve the sugar.

5 Let cool.

6 Puree the watermelon in a food processor or blender until smooth; place in a bowl along with sugar syrup and lime juice.

7 Pour into an 8-inch square baking dish.

8 Freeze until nearly solid, about 2 hours.

9 Scoop mixture into a food processor or blender and beat until mixture is smooth, but not melted.
