  • 2 lbs. kidney beans
  • 4 slices chopped bacon
  • 2 green plantains, finely chopped
  • 1 Tbsp. salt
  • 4 small tomatoes, peeled and chopped
  • 2 onions, chopped
  • 1 clove garlic, minced
  • 1 Tbsp. cooking oil

Directions

Wash the beans and let soak overnight.

Put beans and bacon or salt pork in a cooker with water to cover.

Cook for about an hour .

Add the plantains and cook .

Add the salt and mix well.

Saute the tomatoes, onions and garlic in the oil then add to the beans.

Cook beans another half an hour.
