  • lemon juice
  • 1 6oz bag of fresh baby spinach
  • 1 11oz can of drained mandarin oranges
  • 1 ½ Cups seedless red grapes
  • 1 ½ Cups cooked shrimp
  • 2 stalks chopped green onions.
  • SALAD DRESSING;
  • ¾ Cup olive or macadamia nut oil
  • ¼ Cup orange juice
  • 3 Tbsp lemon juice
  • 1 Tbsp white vinegar
  • 1/3 Cups sugar
  • 1 tsp salt
  • 1 tsp paprika
  • 1 ½ tsp grated onions

Salad Dressing :

Make ahead of time and chill.

Mix in a cruit;

olive or macadamia nut oil

orange juice

Cover and shake vigorously. Refrigerate. Shake again before use.

Dice avocado into a small bowl. Cover with lemon juice and set aside.

MIx in a large bowl;

fresh baby spinach

Drain avocado and add to salad. Toss together. Take 2 or 3 paper towels and run them over cold water. Wring them out and place over the top of salad. Cover tightly with plastic wrap and refrigerate until ready to serve.
