Flake salmon; set aside.

Spray non-stick pan or wok with cooking spray and heat over medium heat. Add onions, soy sauce and pepper; toss. Cover and cook 2 minutes. Add salmon, peas and mushrooms; toss. Cover and cook 1 minute. Serve over rice.
