- 1 cup chicken broth

Directions

Combine rice, juice, broth, salt and pepper in medium saucepan. Bring to a boil; stir once or twice. Reduce heat, cover, and simmer 15 minutes, or until rice is tender and liquid is absorbed.

Stir in coconut and margarine. Cover; let stand 10 minutes. Fold in papaya.
