- 2 large onions, sliced
- 1 1/2 cups uncooked rice
- 3 tablespoons butter or margarine
- 3 cups chicken broth
- 1 10-ounce package frozen green peas
- 2 cups coarsely chopped cooked chicken or turkey
- Salt, ground black pepper and a pinch of saffron

Directions
Cook onions and rice in butter until onions are transparent. Stir in broth, peas and chicken. Season with salt, pepper and saffron. Bring to a boil. Stir once or twice. Lower heat to simmer. Cover; cook 15 minutes or until rice is tender and liquid is absorbed. Fluff lightly with fork.
