  • 1 tbsp vegetables oil
  • 1/2 lb turkey sausage or other low-fat smoked sausage, sliced into ½-inch thick slices
  • 1 med onion, chopped
  • 1 med green bell pepper, chopped
  • 2 cloves garlic, minced
  • 6 cups cooked rice
  • 15 oz can kidney beans, drained and rinsed
  • 15 oz can navy or great northern beans, drained and rinced
  • 14 1/2 oz cans cajun-style stewed tomatoes
  • 1 tsp oregano
  • 1/2 tsp hot pepper sauce
  • 1 cup thinly slice green onions.

Directions

Heat oil in large skillet over medium-high heat until hot. Add sausage, onion, green pepper and garlic. Cook, stirring 7 to 10 minutes or until sausage is browned and onion is tender. Add rice, kidney beans, navy beans, tomatoes, oregano and hot pepper sauce. Cook and stir 2 to 3 minutes more until well blended and thoroughly heated. Sprinkle with green onions and serve immediately.
