  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 2 eggs, slightly beaten
  • 2 cups cooked rice
  • 2 teaspoons grated orange peel
  • 1 teaspoon vanilla extract
  • 1/2 cup whipped topping
  • 1 prepared graham cracker crust
  • 1 11-ounce can mandarin oranges, drained
  • 2 kiwi fruits, sliced
  • 1 banana, sliced

Directions

Combine sugar and flour in 2-quart saucepan; gradually stir in milk. Cook, stirring constantly, over medium heat until thick and bubbly, about 10 minutes. Reduce heat; cook, stirring, an additional 2 minutes. Remove from heat.

Gradually stir in 1 cup hot mixture into eggs. Return egg mixture to saucepan; bring to a slow boil. Cook, stirring, 2 minutes. Remove from heat. Stir in cooked rice, orange peel and vanilla. Cover and chill in refrigerator.

Fold in whipped topping; pour into crust. Just before serving, garnish with oranges, kiwi fruit and banana
