  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1 1/2 large green bell peppers, cut into thin strips
  • 1 large onion, sliced
  • 1 cup diagonally sliced celery
  • 1 1/4 cups chicken broth, divided
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 large fresh tomatoes, cut into eighths
  • 3 cups hot cooked rice
  • 2 eggs, beaten
  • 1 1/2 cups cottage cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 cups grated Cheddar cheese, divided

Directions

Season chicken with paprika, garlic powder and ground pepper. Stir-fry chicken in oil in large skillet or wok 3 minutes or until tender. Add green peppers, onion, celery and 1/2 cup broth; cover and steam 1-1/2 minutes.

Blend remaining 3/4 cup broth with cornstarch and soy sauce. Stir into chicken-vegetable mixture. Add tomatoes; cook, stirring, about 1 minute or until sauce is slightly thickened. Serve over hot rice.
