  • 1/2 pound bulk pork sausage
  • 1 1/2 cups soft bread crumbs
  • 1 cup finely chopped onion
  • 1/4 teaspoon ground black pepper
  • 2 eggs
  • 1 28-ounce can peeled whole tomatoes, chopped
  • 1/2 cup gingersnap crumbs
  • 1 teaspoon curry powder
  • 1/2 teaspoon onion powder
  • 2 eggs, beaten
  • 1 1/2 cups cottage cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 cups grated Cheddar cheese, divided

Directions

Combine beef, sausage, bread crumbs, onion, pepper and eggs in large bowl; mix well. Form into 6 patties. Cook in large skillet over medium heat until brown.

Pour off excess fat. Add tomatoes, crumbs, curry powder and onion powder to skillet. Cover and simmer 25 minutes. Serve over hot rice.
