- 1 medium tomato, coarsely chopped
- 1 small zucchini, coarsely chopped
- 1/2 cup chopped onion
- 1 clove garlic, minced

- 1 tablespoon cider vinegar

Directions

Combine rice, cheese, tomato, zucchini, onion and garlic in large bowl. Blend oil, vinegar, marjoram, salt, pepper and mustard. Toss rice mixture with dressing. Spoon into 2-quart baking dish; bake at 350 degrees 20 to 25 minutes, or until hot.
