  • 1/2 cup minced onion
  • 2 tablespoons butter or margarine
  • 1 4-ounce can sliced mushrooms with liquid
  • 1/4 teaspoon ground black pepper
  • 1/16 teaspoon ground saffron
  • 1 1/2 cups beef broth*

Directions

Cook onion and rice in butter in large saucepan until golden. Add mushrooms, pepper, saffron and broth. Bring to a boil; stir once or twice. Lower heat to simmer, cover, and simmer 15 minutes or until rice is tender and liquid is absorbed. Fluff with fork; sprinkle with Parmesan cheese, if desired
