Directions

Season beef with salt, garlic powder, ground pepper and thyme. Combine rice, spinach, cheese, nuts and eggs in large bowl; spread evenly on beef. Roll beef; tie with string at 1-inch intervals.

Combine onion, carrots, celery, bay leaf, peppercorns and wine in large roasting pan; place beef in pan. Bake at 350 degrees 1-1/2 hours, or until internal temperature reaches 160 degrees. Pan juices may be thickened to serve with beef.
