Ingredients

  • 2 sweet potatoes peeled and chopped
  • 2 large carrots peeled and chopped
  • 1 large white onion chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander seed
  • 1 vegetable stock cube

Directions

Place all ingredients in a large saucepan and pour over 1.25 litres boiling water.

Bring back to the boil and allow to simmer for 20 minutes or until the vegetables are tender.

Allow to cool then blend in a food processor or blender.
