Ingredients

  • 2 cup All-Purpose Flour Sifted
  • 3/4 cup Sugar
  • 3 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Egg
  • 2 tbl Grated Orange Rind
  • 1/2 cup Orange Juice
  • 3 tbl Melted Butter
  • 2 tbl Hot Water
  • 1 1/2 cup Cranberries Halved
  • 3/4 cup Chopped Nuts

Directions

1. Sift flour, sugar, baking powder, baking soda and salt into a large bowl.

2. Beat egg lightly in a small bowl, stir in orange rind and juice, butter and hot water. Add to dry

ingredients; mix thoroughly. Fold in cranberries and nuts. Turn batter into a well-greased 9x5x3-inch loaf pan.

3.Bake at 350F oven for 50 minutes or until cake tester inserted in center comes out clean. Remove

from pan; cool on wire rack.
