Ingredients

  • 3 tablespoon corn oil
  • 2 onions, finely chopped
  • 1 sweet red pepper, seeded and chopped
  • 1 lb. potatoes, peeled and cut into ½-inch cubes
  • 2 tablespoons flat-leafed parsley, chopped
  • 6 cups beef stock
  • Salt, freshly ground pepper

Directions

Heat the oil in a saucepan, and add the onion. Sauté until it is lightly golden.

Add the sweet red pepper and the potatoes, stir to mix and cook for 2-3 minutes.

Add the parsley, pour in the stock and simmer for 30 minutes. Season to taste with salt and pepper.
