Ingredients
- 4 Chicken Breasts, Cubed
- 2 Cups Water
- 1 (14 1/2 oz) Can Beef Broth
- 1 (14 1/2 oz) Can Chicken Broth
- 1 (14 1/2 oz) Can Diced Tomatoes
- 1/2 Cup Chopped Onion
- 1/4 Cup Chopped Green Peppers
- 1 Large Carrot, diced
- 1 tsp Cumin
- 1/2 tsp Black Pepper
- 1 tsp Chili Powder
- 1 tbsp cilantro
- Tortilla Chips
- Monterey Jack Cheese
- Sour Cream
Directions
Combine all ingredients (except tortilla chips, cheese and sour cream) and bring to a boil.
Simmer until chicken is cooked and tender (approx 1 hour).
Serve with tortilla chips, topped with Monterey Jack cheese and a tsp of sour cream (if desired).
