Ingredients
- 1 head cauliflower
- 1 egg or egg substitute
- 3 tbsp matzo meal
- salt & pepper, to taste
- 1/3 cup oil (vegetable works best but olive or nut could be used)
Directions
Boil cauliflower in unsalted water until just tender.
Mash and add remaining ingredients, except oil.
Drop from the tip of a large spoon into hot oil.
Brown on both sides.
