- 4 zucchini
- 1 tablespoon butter
- 1 small onion, minced
- 1 clove garlic, minced
- 1 spoon fresh mint, minced
- ½ cup grated Parmesan cheese
- ¼ cup milk

Directions
Melt butter in large skillet over medium-low heat.
Add onion, cook 2 minutes.
Add garlic; cook 1 minute longer.
Stir in zucchini and mint; cook 4 minutes longer.
Stir cooked rice into zucchini mixture.
Add cheese, milk, pepper and pepper sauce.
