Ingredients

  • 2 boneless sirloin strip steak, about 10 oz. ea.
  • 8 tbsp. butter
  • 1 c. sliced green onions, including tops
  • 1 lb. mushrooms, cleaned and trimmed, whole or sliced
  • 1/2 c. red wine
  • 1/2 c. canned beef broth or consommé
  • 1/4 to 1/2 tsp. salt
  • 1/2 tsp. coarsely ground black pepper
  • 2 tbsp. lemon juice
  • 2 tbsp. minced chives

Directions

In large skillet, melt 2 tbsp butter.

Sear steak on one side for 2-3 minutes

Flip steak, reduce heat, cover, and cook to desired doneness

Remove steak to a warm platter and cover loosely with foil to keep warm

In same skillet, add butter, onions and mushrooms

Cook a few minutes until softened

Add remaining ingredients and scrape pan to bring up any bits of beef left by the steak

Bring to a boil, and simmer until broth reduces

Cut steak into strips and return to the skillet

Mix with sauce to coat before serving
