Ingredients
- 2 c. sugar
- 2 sticks melted butter
- 15 oz. ricotta cheese
- 3 eggs
- 1 tsp. vanilla extract
- 4 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 cup confectioners' sugar
- 2 T. milk
Directions
Mix sugar, butter, ricotta, eggs and vanilla until combined
In a separate bowl, combine flour, salt and baking soda
Gradually add flour mixture to ricotta mixture until combined
Flour hands, and roll dough into meatball sized balls (the dough will be very moist).
Place dough balls 2 in ches apart on ungreased baking sheet
Bake at 350 degrees for 10-15 minutes, or until edges are slightly brown (tops will not be brown).
While baking, combine confectioner's sugar with milk to make icing
Ice warm cookies and top with sprinkles
