Ingredients

  • 2 whole lemons , washed
  • 4 whole limes , washed
  • ½ cup (120 ml ) white sugar
  • 4 tsp (20 ml) lime juice
  • Carbonated water , as needed

Directions

Remove the zest from the lemons and limes in strips, leaving behind the bitter white pith.

Combine the sugar and zest in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.

Strain the solids out of the peel and sugar mixture.

Mix the peel and sugar mixture with lime juice. This should produce slightly under ½ cup (120 ml) of syrup .

To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.
