  • Flour (optional)
  • Egg yolk (optional), beaten
  • Fine breadcrumbs (optional)
  • Beef drippings

Directions

Boil the potatoes until almost done. Drain.

If desired, dip the potatoes in flour, then egg yolks, then breadcrumbs.

Heat the drippings in a pan . Add the potatoes, and fry until brown and crisp, shaking regularly to prevent burning.

Remove from pan, and serve hot.
