Ingredients

  • ½ pound self-raising flour
  • ½ pound butter
  • ½ pound (4 ea. ) eggs
  • ½ pound caster sugar
  • 1 tsp vanilla extract (optional)
  • ½ pound assorted dried fruit ( currants , sultanas , and raisins , with perhaps a lesser quantity of glacé cherries ; optional)

Directions

Preheat the oven to 175°C (350°F or Gas Mark 4) .

Cream the butter and sugar together until fluffy.

Beat in the eggs and add the vanilla extract.

Gradually sift in the dry ingredients.

Transfer to a greased and floured baking pan .

Bake for 35 minutes or until a skewer inserted shows no moist crumbs when removed.
