Ingredients

  • 500 mL (2 cups) lower fat plain yogurt
  • 45 mL (3 tbsp) maple syrup or honey
  • 2 mL (½ tsp) vanilla extract
  • 5 mL (1 tsp) lemon juice
  • 500 mL (2 cups) berries of choice (blueberries, strawberries, or a combination, etc.)

Directions

Line a baking sheet with wax paper (or parchment paper) and set aside.

In a large mixing bowl combine yogurt, maple syrup, vanilla, and lemon juice; whisk until thoroughly combined.

Transfer yogurt mixture to previously prepared baking sheet and spread it around to an even thickness.

Top with berries.

Freeze for 2 to 3 hours, or until firm.

Cut or break into pieces and serve immediately.

Store remainder in an airtight container in the freezer, for up to 2 weeks.
