- one-half teaspoon of soda dissolved in a little water
- two cups of flour
- a small cup of corn starch dissolved

Directions
Two coffee cups of sugar, whites of nine eggs, small cup of butter. Cream the butter and sugar. Beat the whites to a stiff froth and add one cup of milk with a small cup of corn starch dissolved in it, one even teaspoon of cream tartar, one-half teaspoon of soda dissolved in a little water, two cups of flour. Sift the cream tartar in the flour. Mix well the butter, sugar and eggs ; add the corn starch and milk but do not beat, then add the flour. Mix again. Add the soda the last thing and put in the oven instantly. Have a slow, steady fire. Flavor with almond.
