i ¢. sugar 1 e orange juice 1 pt. water 1 tsp gelatine Boil water and sugar, and add gelatine soaked in little water 5 minutes. When cool, add orange juice. Strain and freeze.

The milky juice of the papaya contains a digestible prin- ciple similar to pepsin. Its leaves have the property of making tough meat tender when wrapped in them over night.
