- four round tomatoes

Select four round tomatoes; scald very quickly, and re- move the skins. Let them get entirely cold, then cut in several slices, taking great care not to remove the slices, so as to preserve the shape of the tomato. Serve on a lettuce leaf, w^ith a generous spoonful of mayonnaise sauce on the top of the tomato.
