Peel and boil until soft a dozen medium-sized potatoes in as little salted water as will cover them; as soon as done, mash thoroughly, adding a tablespoonful of butter and three

tablespoonsfiil of cream or milk; serve very hot. They are improved by putting in a dish, round them over the top, brush with egg, put a lump of butter in a hole in the center, then set in the hot oven for five minutes. Should be sent to the table in the dish in which it was baked.
