Two ])Ounds of boiled beef chopped line, two pounds of suet chopped, two pounds of raisins seeded, two pounds of currants, one pound of citron, teaspoonful each of cloves, cinnamon, allspice, nutmeg, and half one of mace; two tea- spoonsful; mix and pack in an earthern jar. Pour a quart of brandy over the top and cover tightly. This will keej) all winter. When needed take out as much as you wish, add half as much chopped api)le as the mince meat you use, add to it a spoonful of vinegar, two of molasses, sugar to taste, a tablespoonful of melted butter, the juice of one orange, and of one lemon, the grated rind of half of each, and enough cider or water to thin it, if needed. I have estimated that one quart of mince meat was taken from the jar, so as to get the ])roportions correct.
