Directions

Place 2 cups mashed potatoes into a sauce pan, add the yolks of 2 eggs, 3 tablespoons cream, 1 tablespoon butter 1 teaspoon salt, stir constantly over the fire until potatoes are light and hot. Remove from stove, add beaten whites of 2 eggs. Put into a buttered baking dish and bake in oven until a nice brown.
