  • 1 tablespoon cracker crumbs

Directions

Cut the stem ends from as many peppers as there are people to be served. Remove the insides with a sharp knife, scald for five minutes and drain. Cold chopped meat of any kind, or chopped fresh beef may be used for filling. Mix 2 tablespoons meat with 1 tablespoon cracker crumbs, season with chopped fresh tomato, a little onion juice, salt and pepper' to taste. Moisten with a little stock or milk. Fill the peppers, put a bit of butter on top, tie on covers, and put in pan with enough water to keep from burning. Cover for fifteen minutes, then cook fifteen minutes longer. Serve immediately.
