  • 1 cup cream in double boiler
  • 3 pounds of lobster picked to pieces
  • 2 large tablespoons butter in saucepan
  • cayenne
  • pepper
  • mace
  • salt

Directions

Put 1 cup cream in double boiler and heat. Melt 2 large tablespoons butter in saucepan, add dessert spoon flour, a little cayenne pepper, mace and salt. Stir into hot cream and let it boil up. Mix this with 3 pounds of lobster picked to pieces. Fill lobster shells with the mixture, cover with bread crumbs, bits of butter, and brown in oven. Serve hot.
