Directions
SALMON CROQUETTES— Two tablespoons of butter, two tablespoons of flour, one large can of salmon, one teaspoon of lemon juice, one cup of milk, one egg, bread crumbs. Drain the salmon and remove bones and skin. Make a thick sauce of butter, flour and milk. Cook until smooth and season with salt, pepper and lemon juice. When cold stir in salmon. Shape into croquettes, dip in egg and bread crumbs and fry in deep fat.
