SWEET POTATO CROQUETTES— One pint mashed sweet potatoes, two tablespoons of butter, one-eighth teaspoon pepper, one- half teaspoon of salt, yolk of one egg. Mix together all the ingredi- ents, rub through a sieve and add one teaspoon of chopped parsley. Shape into smooth balls, then into cylinders. Dip in bread crumbs, then in beaten egg, then in crumbs again. Fry in deep hot fat. Drain on paper and serve on hot dish.
