SURPRISE POTATO BALLS— Six large potatoes, three hard- boiled eggs, one tablespoon of butter, one tablespoon of milk and two eggs, and bread crumbs. Boil potatoes and then mash with butter and milk and cool. Cut hard boiled eggs into quarters, sprinkle with salt. Cover each quarter with potatoes and make into balls or egg shape. Roll into flour, then into the beaten egg seasoned with salt and pepper, and then into bread crumbs. Fry in hot fat and serve hot.
