Beat three eggs well, add to them three heaping teaspoon- fuls of flour, beat them well together, then stir them into a pint and a half of boiling milk, add a little salt and sugar to taste. Flavor with essence of lemon. Stir while it is boiling. When it is perfectly smooth, it is done. Line pie plates with puff paste, and bake them in a quick oven. When done, fill them with the mock cream, strew powdered sugar over the top, and place them again in the oven to brown. When a fine color, they are done.
These will be found superior to custard pies. This quantity makes two.
