  • a pinch of tartaric acid

Directions

The whites of two eggs, to half a pound of white sugar. Dissolve the sugar with water, and boil till a thick sirup, or till it will break off like threads of glass when you pour it from a spoon. Beat the eggs stiff, pour the sirup on gradu- ally while hot, and beat till cold. Add a pinch of tartaric acid, and essence of lemon.
