To the pulp of six baked apples, add one ounce of rice, previ- ously boiled in milk and beaten smooth, one ounce of sugar, grated rind of one lemon and one tablespoon of the juice. Mix well together; then take the whites of four eggs, beaten to a stiff froth, put them into the other ingredients, boil up quickly, and pour into a warm mold. Place in a quick oven and, when perfectly set, turn it out and pour a custard over it, made from the yolks of the eggs.
