One pound of sugar, one pound of butter, one pound of flour, nine eggs leaving out two yolks, the juice of one lemon and the grated peel of two and two cups of currants. Rub the butter and sugar together till very light, then add the yolks of the eggs well beaten, and a part of the flour; beat the whites to a stiS" froth and add them with the remainder of the flour; beat well together; cover the bottom of the pan with white paper and butter; bake in a rather slow oven.
