Take a good sized ham ; put it into lukewarm water covered as tightly as possible ; allow no more steam to escape thau pos- sible ; a ham weighing sixteen pounds, boil from four to five hours ; then let it stand in the water until cold ; if taken from the stove at night do not taks it from the kettle until morning. The same plan when boiling beef or tongue.
