- one half dozen irish potatoes in a quart of water

Boil one half dozen Irish potatoes in a quart of water, when done, mash very fine; add a large tea-cupful of flour; when cool, add a piece of this quick yeast about the size of a small almond, dissolved in water ; make this sponge at dinner time, it will rise in a few minutes ; set it away tiU. about one hour before supper, when you can work in enough flour to this sponge to make a soft dough ; put in a small lump of lard ; mould in any shape you desire, and put to rise; when light, bake. — Mrs. Henry Buckner.
