Let the cider from good, sound apples ferment until palatable ; then draw off into a clean barrel, and add quarter of an ounce of sulphate of lime to every gallon of cider. Mix the sulphate in a bucket of cider, return to the barrel and shake well. Let stand until clear, when it is fit for use. — Mrs. Davis.
