To one quart of boiling water add one-half tea- spoonful of salt and two-thirds of a cup of " Cream of Wheat;" stir it in slowly, put in double boiler and boil for three-quarters of an hour. Pour into a square pan to harden. When ready for use, slice in pieces of uniform size, dip in diluted egg, then into corn- meal, and fry in hot lard.
