Directions

Take three chickens and an equal quantity of celery, cut fine, and sprinkle both with salt. The yolks of four eggs, quarter box of mustard, one large bottle of Lautier's olive oil, half a teacup vinegar and a very little pepper. Beat well together, and just before going to table pour some of the dressing over the chopped chicken and celery. This is a sufficient quantity for fifteen persons.
